Ingredients:
•500 ml fresh cream (you can use more, but I make smaller batches for a quicker process)
•1 teaspoon salt
Method:
1. Add your fresh cream to a bowl and start mixing it with an electric hand mixer. (Tip: Cover the bowl with a tea towel to prevent splashes.)
2. Mix until you reach the whipped cream stage.
3. Scrape down the sides of the bowl occasionally.
4. Continue mixing until the buttermilk separates from the butter (this can take around 10 minutes).
5. Strain the mixture through a sieve.
6. Rinse the butter in the sieve under cold water to remove the buttermilk.
7. Transfer the butter to a bowl of ice water.
8. Squeeze the butter to get out the remaining buttermilk. (Avoid adding ice cubes directly to the butter.)
9. Add your salt and mix well.
10. Shape the butter using baking paper and refrigerate.
