INGREDIENTS:
CHICKEN:
-chicken drumsticks
-1 onion
-1 garlic clove
CHICKEN SAUCE:
-1 cup of greek yogurt
-1 tsp mustard
-1 heaped tablespoon mayonnaise
-5 tablespoons chutney
-salt + pepper to taste
BUTTERNUT:
-Butternut
-Salt + Pepper
-Olive oil
-Honey
-Pumpkin seeds
METHOD:
CHICKEN:
-preheat oven to 180°
1.) Fry an onion & garlic clove in your casserole.
2.) Add your chicken bits. I used drumsticks.
3.) Cover them with your sauce + toss. You can add a bit of chicken stock to get more sauce, but this was enough for me.
4.) Cover the casserole with the lid & pop them in the oven with the butternut.
5.) Bake for about 40 mins & turn your pieces around. Remove the lid.
6.) Bake for about another 20 mins.
BUTTERNUT:
1.) Chop up in circle slices.
2.) Add to a baking tray & cover with olive oil, salt + pepper & honey.
3.) Pop them into the oven with your chicken.
4.) Check on them & turn around at about 20mins.
5.) Add some pumpkin seeds & bake for another 20mins (more or less).
Serve with rice! Enjoy!
