One pot mushroom rice.



This is one of my favourites as a side dish & trust me, it’s such a crowd pleaser!


Ingredients (serves 4 sides)


300 g sliced mushrooms

40 g butter

Salt + pepper to taste

330 ml chicken or vegetable stock

Handful of fresh oregano

1/3 cup of chopped almonds

100g rice


Method:


1.) Melt your butter in a pot & let it slightly brown.

2.) Add your mushrooms & let it brown on low heat.

3.) Add your spices, oregano & chopped almonds. Fry for another minute or two.

4.) Add your rice & chicken stock.

5.) Cover the lid & let it cook until the rice is ready. (About 20 minutes)


Serve & enjoy!
