Potato + Leek soup



Ingredients:


2 tbsp olive oil

350g leeks, cut into pieces (make sure you wash them thoroughly)

1 tbsp salt

300g potatoes, cut into pieces

3 cups of water

250ml cream

salt + pepper to taste


OPTIONAL: Crispy bacon bits.


Method:


1.) Add your olive oil to a pot on medium heat & sauté your leeks for a few minutes.

2.) Add your salt, potatoes and water & bring to a boil. Cover the post for about 15 minutes or until your potatoes are soft.

3.) Blend with a stick blender, or add everything in your normal blender.

4.) Add your cream & blend again.

5.) Season with salt & pepper. It needs a lot of salt, so don't be shy :)

6.) Optional: add crispy bacon bits & stir through.
